Hi there guys! I’m excited to share another healthy recipe with y’all! This one happens to be vegetarian and gluten free. If you are looking for a great meatless meal, this is it!! The pizza is loaded with yummy veggies, full of flavor and super filling!
See below for ingredients and steps to make this cauliflower crust pizzas!!
1. Sauté chopped onions in one tablespoon olive oil over medium heat for about 5 minutes or until translucent. Add in thinly sliced pepper and chopped mushrooms. Seasons with salt and pepper to taste. Cook for a remaining 5 minutes.
2. While the veggies are cooking, cook the brussels sprouts. Place halved sprouts on baking sheet and toss in one tablespoon of olive oil and salt/pepper to taste. Roast in oven at 415 degrees for 20 minutes or until browned. This is optional – you could also add other roasted veggies.
3. Spread the tomato sauce evenly over the two pizza crusts.
4. Sprinkle with 1/4 cup of shredded Italian cheese.
5. Layer on pepper veggie mix and brussels sprouts.
6. Finish off with 1/4 cup of shredded Italian cheese and half of the mozzarella balls. *Note – add as little or as much cheese as you want. I usually do one with the mozzarella balls and one without.
7. Bake in the oven for 12-15 minutes at 425 degrees. The longer you cook, the crispier! Enjoy!
