Summer Salad Details

Summer is officially here! I love making salads in warmer months and today’s recipe is my easy and healthy go-to option. This summer salad is Greek-ish with cherry tomatoes, cucumbers, peppers and feta. What really makes my salad standout is my bomb LEMON DRESSING. I literally put it on everything! I prob make this beauty 3-4 times a week and add a protein. Bing. Bang. Boom!

Below is the list of ingredients and steps to make your own summer salad.


2 cups of arugula lettuce

2 heads of romaine lettuce chopped

1 pepper chopped – I prefer orange or red

1 cup of cherry tomatoes sliced in half

1 english cucumber diced

1 Avocado cubed

1/2 block of feta crumbled

Lemon Dressing – recipe here


1. Mix both lettuces together in a large bowl.

2. Add all remaining ingredients on top: peppers, tomatoes, cucumbers, avocado and feta.

3. Toss salad in lemon dressing. Enjoy!
