Gluten Free Pumpkin Chip Muffins

Yup… coming at you with my first FALL recipe of the year! It’s never too early for a little bit of pumpkin. Amiright?! 🙂
Prep time 20 minutes
servings 12

ingredients

  • 1 1/2 cups almond flour
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 2 tsp pumpkin spice
  • 1/2 tsp ground cinnamon
  • 4 large eggs
  • 3/4 cup pure pumpkin puree
  • 1/3 cup honey
  • 1 tsp pure vanilla extract
  • 1/3 cup chocolate chips – I prefer dark

instructions

  • Preheat the oven to 350 degrees
  • In a medium bowl combine all dry ingredients and mix evenly – almond flour, salt, baking soda and spices. Set aside.
  • In a separate bowl, combine all wet ingredients and whisk – eggs, pumpkin puree, honey and vanilla.
  • Combine dry and wet ingredient. Stir until batter is smooth.
  • Fold in chocolate chips to muffin mixture.
  • Place the muffin cup liners in the tray. Spray with avocado oil – easier to get out!
  • Scoop batter into muffin liners, about half way – they will rise.
  • Bake for 15 minutes or until toothpick comes out clean.
  • Let cool. Enjoy!
