Happy Friday, y’all! Tomorrow is the first day of June so that means Summer is here! In the next few months I’ll be sharing my favorite fresh and healthy warm-weather eats. Let’s first start with my simple watermelon salad!
I pair this easy salad of only 5 ingredients, with a healthy balsamic vinaigrette for an added touch of sweetness and flavor. This recipe takes about 15 to whip up – so fast! I also want to point out, it’s also gluten-free. I usually pair this salad with bbq chicken or fish. It completes a perfect summer dinner! See below for all ingredients and steps – enjoy!

(makes 4-6 servings)
gluten free
1/2 medium watermelon cubed
1/2 cup diced red onion
1/2 cup crumbled feta cheese
1/2 cup chopped fresh mint
Cracked black pepper
1/4 cup balsamic vinegar
2 Tbsp extra virgin olive oil
1 Tbsp water
1Tbsp dijon mustard
1 tsp honey
salt/pepper
1. Take watermelon out of the fridge, cut into bite size cubes and place in a large bowl. I prefer COLD watermelon for the salad π
2. Add in diced red onions, chopped mint and crumbled feta cheese to the top of the watermelon. Finish of the salad with cracked black pepper to taste.
3. In a separate small bowl, mix together all ingredients for the balsamic dressing – vinegar, olive oil, water, mustard, honey and salt/pepper. I use a fork but you can also use a whisk.
4. Place a serving of the watermelon salad into a smaller bowl. Drizzle with about 1 Tbsp of balsamic dressing over the top. Enjoy!
Note: I don’t mix the dressing in the bigger bowl because if I have leftovers it will last longer without dressing. This is why I do it on individual servings!

Thank you for this recipe!! I made it for a wedding shower and made it again for myself. I think I’ve had it 3 times this week, over greens, with chicken. Especially love the dressing. Yum!
