This is the Halloween drink I actually wanted to make. A frozen spider sitting inside a deep red pomegranate cube, then champagne poured over the top so it slowly bleeds into the bubbles. It looks dramatic. It takes almost no work. And it is the kind of thing people will ask about before they take a sip!
I froze the spiders in pomegranate juice the day before, kept the champagne cold, and poured it tableside so everyone got the full reveal. The red starts as a little ribbon and then swirls through the glass like blood. Perfect for a Halloween table, a girls’ night, or just because October!
Small plastic spiders (food-safe, or washed well)
Pomegranate juice, the darker the better
Champagne or a dry sparkling wine, well chilled
Ice cube tray – I used a small muffin pan
Champagne coupes – you want the ice cube to fit inside the glass (needs to be a wider mouth)
Pour pomegranate juice until the compartments are full.
Set one spider in each compartment of the ice cube tray.
Freeze until solid, at least 4 hours. Overnight is better.
Keep them in the freezer until you are ready to serve.
Drop one cube into each glass.
Pour cold champagne slowly over the ice.
Let it sit for a minute. The cube starts to melt, the red bleeds into the bubbles, and the spider comes into view.
Keep the champagne very cold. The slower the cube melts, the longer the effect lasts.
Want it stronger? Add a small splash of vodka before the champagne.
Make the cubes ahead. They hold in the freezer for a few days, so you are not doing this the hour guests arrive.
One cube per glass is plenty. More than that waters the drink down once it melts.
I love this for a Halloween table because it feels festive without being fussy. The spiders do the work. You just pour.
Serve them as people walk in so they catch the bleed before the cube disappears. Cheers!
