Summer Cabbage Salad

Summer is fast approaching so it’s time for ALL of the yummy salads! Today’s recipe is one of my go-to’s for warmer evenings. Since the base is cabbage it has a whole lot of crunch paired with the creaminess of avocado and a hint of sweet mango. The perfect balance!

I typically eat this salad with grilled fish or in shrimp tacos (recipe coming). It takes under 10 minutes to make, is healthy and full of flavor! Below is a list of ingredients and steps to make it. Enjoy!


Ingredients

1/2 green cabbage sliced

1/2 red cabbage sliced

1 avocado diced

1 mango peeled & diced

1 cup cherry tomatoes halved

1/2 block of feta cheese crumbled

Dressing – recipe here

1 lemon

1/4 cup of olive oil

2 Tablespoons dijon musard

2 cloves of garlic

1/2 tsp honey or agave

Sea salt

Pepper


Steps

1. Place thinly sliced red and green cabbage into a large bowl and top with all remaining ingredients: avocado, mango, cherry tomatoes and feta.

2. Make lemon dressing and drizzle on salad. Toss and enjoy!
