Hey hey! Summer isn’t over quite yet, SO let’s make some popsicles!! I have been whipping these healthy strawberry cherry pops up for the entire family, and they’re a hit. Great news, these popsicles are packed with healthy fat (coconut milk), fiber (fruit) and raw honey. The perfect warm weather sweet treat!
This recipe consists of 5 simple ingredients and they’re super easy to make. Mix everything in a blender, pour it into a mold and put them in the freezer to harden. Bing. Bang. Boom!
I typically make a batch on Sundays that way we can enjoy them throughout the week. Links for what you need here: mold & sticks. See below for details!
{makes 12}
2 cups of fresh or frozen strawberries
1 cup of frozen cherries
1 13.5 oz can coconut milk (full fat)
1/4 cup raw honey (use local if you can)
1 teaspoon vanilla extract
1. Mix all 5 ingredients together in a blender. I like it to be slightly chunky.
2. Pour popsicle mixture evenly into the mold. Fill to slightly under the rim.
3. Place the cover on top.
4. Put a popsicle stick into each mold.
5. Set in the freezer until frozen. Around 8 hours.
