Hey there, mamas! Since starting to feed Ford REAL food, I’ve been getting a lot of y’all requesting for me to share… SO, I am! This is my first of many BABY EATS coming your way.

Today’s recipe is a festive fall twist to a good ‘ole baby pancake – PUMPKIN!! I’ve found these egg pancakes are a great way to get him protein. Ford LOVES them and they’re soft, so moms, don’t freak out – NO choking hazard. But like, seriously, it’s a bit terrifying feeding your little one in the beginning. For us it has taken consistency and practice. Now, he’ll pretty much GO for it! LOL

See below for the list of 5 ingredients and steps. These are easy and great to make at the beginning of the week. This recipe makes about 10 pancakes and will last in the fridge for 3 days. I hope your babies enjoy!


Ingredients

{makes 10 pancakes}

1/4 C smushed ripe banana (typically 1/2 banana)

1/4 C canned pumpkin – I use this one from Thrive

2 Eggs

1/4 teaspoon baking powder

Cinnamon


Steps

1. whisk banana, pumpkin, eggs and baking powder into a bowl.

2. sprinkle batter with cinnamon and stir.

3. heat oil and/or sprayed skillet over medium heat. I used avocado spray.

4. Place 1 Tablespoon of batter onto heated skillet per pancake.

5. When pancake is bubbling and more firm, flip to cook other side.

6. Let cool for a few minutes before baby enjoys them! Ford eats 2-3 per meal. They will last in the fridge for about 3 days.

  1. So …I made these this morning for my husband and I. Always looking for whole clean foods to eat for breakfast and thought these looked and sounded good!

    They are surprisingly delicious! I tried to make larger pancakes for us but it’s easier to flip when they’re smaller.

    Headed out the door for golf today, having Boise weather here in Austin finally. Thanks for all the great ideas you share with us always.
