Hormone-Supporting Raw Carrot Salad

Hey y’all!

This recipe is the simple daily ritual that helps clear excess estrogen. If you’ve been feeling the classic estrogen-dominance symptoms—bloating, breast tenderness, mood swings, or that stubborn PMS—this is the easiest little habit I’ve been leaning on. One grated carrot a day, dressed simply, and the fiber helps bind excess estrogen in the gut so your body can actually get rid of it instead of recycling it.

I keep the skin on (just soak & scrub well) because that’s where a lot of the good fiber and nutrients live. And I eat it between meals on an empty stomach—especially during the luteal phase when estrogen can creep back up.

Here’s exactly how I make mine…


Ingredients

{serves 2-4}

4 medium organic carrots

2 Tbsp apple cider vinegar

Juice of ½ lemon

1 Tbsp Dijon mustard

1 Tbsp raw honey

¼ cup extra-virgin olive oil

Sea salt, to taste

Optional: a small handful of fresh dill, cilantro, parsley, or mint


Instructions

1. Clean the carrots: soak them in a bowl of water with a splash of vinegar for about 10 minutes, then scrub them well under running water. (I leave the skin on for the extra fiber and nutrients, but you can lightly peel if you prefer.)

2. Grate or ribbon the carrots into a small bowl. I use a peeler.

3. In a jar or small bowl, whisk together the apple cider vinegar, lemon juice, Dijon, raw honey, olive oil, and a pinch of sea salt until smooth and emulsified.

4. Pour just enough dressing over the carrots to coat (you’ll have extra—save it for tomorrow).

5. Toss, let it sit 5 minutes so the flavors marry, then top with a little fresh dill or whatever herb you love.

Eat it as a snack between meals or as a light appetizer before lunch or dinner.


That’s it. A few carrots, five minutes, and it actually tastes bright and satisfying.

I make a bigger batch of the dressing at the start of the week so all I have to do is grate a carrot and toss. If raw feels like a lot some days, start with half a carrot and work up.
