It’s watermelon season!! Let’s make one of my favorite salads of the summer. It’s so easy to whip together with 4 simple ingredients: watermelon, blueberries, feta and fresh mint.
This has always been a crowd pleaser at our BBQs. I made it extra festive for the 4th of July with the star watermelons AND it’s perfect because it’s red, white and blue! I simply use a small cookie cutter (1.8″) for the shape – link here. I cut up the extra scrapes and eat it throughout the week 😉

1 large watermelon
1 tub of blueberries
1/2 block of feta
5 leaves of fresh mint
1. Cut the watermelon into quarters. Take each quarter and cut into long slices about 1/2 inch thick.
2. Press the star cookie cutter into the long slice to create the shape. Push watermelon out of the cookie cuter and place the star into a large bowl. Repeat until you’ve used the entire watermelon. I can get about 4-5 stars per slice.
3. Place the blueberries on top of the watermelon.
4. Sprinkle the crumbled feta cheese on top.
5. Chop up the fresh mint and garnish the top of the salad.
*Store in an airtight container in the fridge. It will be good for about 5 days.
