Are y’all ready?!! I wanted to create my own version of the viral protein ice cream and I’m so excited to share the recipe. TBH (to be honest), it took about 4 different versions to get it right. The first few tasted way too cottage cheesey. Once Ford (my 3 year old) approved, I knew I had got it down!
I’ve been trying to up my protein intake and this batch has 56 grams. If you’re looking for something sweet, yet healthy-ish, give this ice cream a try! I added one of my favorite summer fruits, strawberries, but it can definitely work with other options.
Next on my agenda is to create a nut butter/chocolate chip option! Stay tuned…
Ingredients and steps to make this below.
2 cups (1 tub) cottage cheese – I use Good Culture
2 cups diced strawberries
1/4 cup maple syrup
1 teaspoon vanilla
1. Place cottage cheese, 1 and 1/2 cups of strawberries, maple syrup and vanilla in a large bowl. Use an immersion blender to mix until creamy. This is key!
2. Fold in remaining 1/2 cup of strawberries.
3. Put mixture into a glass airtight container and place it in the freezer until it hardens. About 3+ hours.
4. Once it hardens, scoop out your ice cream and enjoy!
