Hey there, babes! Today I’m sharing a quick an easy recipe to liven up SO many dishes. I’ve been testing out an avocado basil pesto this past month and I finally got it right! Mixing just a bit of olive oil and nuts with the creamy texture and flavor of an avocado, was THE perfect touch.
I’m posting a new FALL cauliflower crust PIZZA next week using this avocado basil pesto as the base. Trust me, y’all are going to want to devour it! Other great things to put this spread on are: salmon, spaghetti squash, roasted veggies, baked/grilled chicken, flank steak and grilled shrimp. This pesto is a great way to add flavor to proteins and/or veggies.

1 cup packed fresh basil leaves
1/2 large ripe avocado
3 cloves garlic
2 Tbsp. almonds
1 Tbsp. fresh lemon juice (typically 1/2 lemon)
1/4 cup water
2 Tbsp. olive oil
1/4 cup grated parmesan cheese
sea salt to taste
1. Add all ingredient into a blender: basil, avocado, garlic, almonds, lemon juice, water, olive oil, parmesan cheese and salt.
2. Blend on medium for about 30 seconds or until mixed into a creamy consistency. See image below.
