Ginger Cabbage Salad

Hi hi! Excited to share this simple ginger cabbage salad. I LOVE a crunchy salad situation and this one is an all-time favorite. This is a salad you can actually make ahead of time and let it soak in the yummy ginger dressing. The cabbage softens and gets more flavor. No soggy lettuce!

I simply chop up the cabbage, soak it in water and baking soda to clean, rinse and let air dry. Once that’s done I add in rainbow carrots, english cucumbers, fresh cilantro and avocado for a bit of creaminess. All of these ingredients combined make for the freshest salad! Toss with my ginger dressing and it is perfection.

This recipe is a great side come spring or summer. I like to create a bowl for dinner with a protein (ground turkey, wild salmon or flank steak) and quinoa or rice. The combo is delicious.

Ingredients

Cabbage Salad

1/2 red cabbage chopped

1/2 green cabbage chopped

5 large rainbow carrots peeled & sliced

1 large english cucumber diced

1 avocado diced

1/2 cup cilantro chopped

Ginger Dressing

1/4 cup olive oil

1/4 cup rice vinegar

2 Tablespoon tamari

4 teaspoons honey

2 teaspoon toasted sesame oil

1 teaspoon ground ginger

1/2 teaspoon garlic powder


Steps

1. In a large salad bowl place cabbage, carrots, cucumbers, cilantro and avocado. Mix well.

2. In a small bowl whisk together dressing: olive oil, rice vinegar, tamari, honey, sesame oil, ground ginger and garlic powder.

3. Pour dressing over cabbage salad and toss well. I typically use all of the dressing so the cabbage can soak it up!
