Healthy Ahi Tuna Poke Bowls with Coconut Aminos Dressing

Fresh, customizable, and perfect for the whole family. This is one of my favorite summer meals!

One of the things I love most about poke bowls is how easy they are to make “build-your-own.” Everyone gets exactly what they want, it looks gorgeous on the table, and it’s a fun, nourishing way to get fresh ingredients into everyone’s day.

Here’s my go-to setup using the simple dressing. It’s light, bright, and lets the quality of the fish shine.


Ingredients

Quick Dressing (whisk together):

¼ cup coconut aminos

2 tsp fresh lime juice

2 tsp sesame oil

¼ tsp garlic powder

Base:

Warm jasmine rice or cauliflower rice

Sushi-grade ahi tuna, cubed and lightly marinated in the dressing (10–15 min max)

Fresh Toppings (all the good stuff):

Cucumbers – thinly sliced or diced

Avocado – sliced or cubed

Carrots – shredded or matchstick

Radishes – thinly sliced for crunch and color

Green onions – sliced on the diagonal

Cilantro – fresh leaves or roughly chopped

Sesame seeds – toasted white or black (or both!)

Optional Extras for the Table (great for variety):

Mango or pineapple chunks

Pickled ginger or jalapeño

Nori strips

Microgreens

Extra lime wedges


Instructions / How to Assemble (the pretty way)

1. Start with a generous scoop of rice in each bowl as your canvas.

2. Add a mound of marinated ahi tuna in the center.

3. Create little sections around the tuna: cucumbers and radishes on one side for crunch, avocado and carrots on the other for creaminess and sweetness.

4. Scatter green onions, cilantro, and a generous sprinkle of sesame seeds over everything.

5. Finish with an extra drizzle of dressing and a squeeze of lime.

Pro tip for photos or guests: Use shallow bowls and arrange ingredients in neat rows or color-blocked sections. It makes the table look like it came straight out of a magazine, but it only takes an extra minute.


Kid-Friendly Swaps

Let them build their own with fun toppings — my boys love making “rainbow bowls” with all the colors.

Add a touch of honey or a few mango pieces to the dressing if they want it slightly sweeter.


This Build-Your-Own setup is such a winner in our house — it feels special but is genuinely quick and nourishing. Fresh fish, lots of veggies, healthy fats from avocado, and zero junk.
