Cauliflower Rice Recipe Details

Hey babes!!  Who’s ready for the yummiest sitch in all of the land?? This recipe is a GAME CHANGER!!  My CAULIFLOWER rice recipe has a lil’ Mexican flavor and is perf for SO many of my go-to bowls.  I’ve used it for the following dinners: Fajita Bowl, Taco Salad Bowl, Salmon Broccolini Bowl, Paleo Bowl and a Breakfast Bowl to name a few.  I’ll be sharing all of these recipes in the coming months BUT thought y’all needed to know how to make my “secret” base item first!!  Below are the 8 ingredient you will need and a step-by-step guide on how to make this nom nom healthy rice!  It’s quick and easy and the perfect grain sub for a meal.

Ingredients

(makes 4 servings)

Paleo, Gluten Free, Vegetarian and Vegan

1 Tbsp. Olive Oil

1 Sweet Onion chopped

3 Garlic Cloves minced

Cauliflower Rice – one package pre-chopped or one head chopped in small pieces

 2 Tsp. Cumin

1 Tsp. Sea Salt

2 Tbsp. Tomato Paste

1/4 Cup Chicken Broth (or veg for Vegans and Vegetarians)

Steps

1. In a large skillet sauté chopped onion and garlic in olive oil over medium heat – about 5 minutes until onions are browning and translucent.

2. Stir in cauliflower rice

3. Add cumin and sea salt – stir evenly.

4. Put in tomato paste and chicken broth.  Stir into cauliflower rice mixture until evenly coated.  Turn down heat and let simmer for about 5 minutes.

5. Place in bowls and add favorite toppings!  My go-to is a Mexican bowl – add in shredded chicken, avocado and cilantro 🙂
