Hey there! I’m SO excited to share my homemade caramel sauce! I was planning to make some yummy fall treats with caramel this season and started to look for a “healthy” option. I know, I know it is a sugary treat, BUT so many of the brands use granulated sugar AND additives – i.e. gums.
My wheels started turning and I knew I needed to create my own homemade version that used a natural sweeteners: maple syrup and dates + no added crap! So here we are!
I first started recipe testing with coconut milk, maple syrup and the dates. It was too runny and I wanted it to be a bit thicker. This is when I decided to add the cashew butter, and it was the missing piece! I like that is gave the caramel the right texture, made it a little less sweet, with a hint of nut flavor. You can use peanut butter but you will taste that flavor much more.
I will be drizzling this on all of my apple treats this season. New recipe using this sauce coming up next!
See below for the list of ingredients and steps. Enjoy!
2/3 cups full fat coconut milk
1/2 cup maple syrup
1/3 cup cashew butter (or any nut butter)
16 pitted dates
1. Put all ingredients in a high powered blender. Blend until creamy!
*Before drizzling make sure to whisk it back up.
*Store in an airtight container in the fridge.
