Hiya!! Are you in need of a healthy dinner that’s easy and delish?? Chicken Fajita Bowls for the win!! I made this with y’all on last week’s cooking live. It was so fun!! I wanted to post the recipe here for you guys. It is THE best bowl and I make at least once a week using my lemon dressing, cauliflower rice and crockpot chicken. Note, you can always use whatever protein you have. Switch it up! Last night I had leftover flank steak and used that instead of chicken. This meal is also a great option if you eat gluten or grain free. YAY!

3. Slice your onion and peppers long ways – think fajita style veggies!
4. First place onions in a skillet with 2 Tablespoons of olive oil and sauté over medium heat. Season with salt and pepper and cook for about 5 minutes or until onions are translucent. Add peppers. Cook for about 5-10 more minutes. I like mine to still be a little crunchy – not soggy.
5. While cooking the fajita veggies (onions and peppers), make the cauliflower rice – recipe here.
6. Once the chicken, onion/pepper mixture and cauliflower rice are done cooking, it’s time to put together the bowls!
7. Toss greens with the lemon dressing.
8. Place the greens on the bottom of an individual serving size bowl. Layer on the fajita veggies, cauliflower rice, chicken and optional toppings: avocado, cilantro, cheese and chips.
