Rainbow Wrap Recipe Details

Hey, babes!! I’m SO excited to start to share recipes.  Y’all ask me about what I eat on the regular so I thought I’d start to incorporate my healthy meals on the blog.  This recipe is one of my HEALTHY favorites and a great go-to lunch and/or dinner.  This recipes can easily be vegetarian (omit chicken) and/or vegan (omit chicken and feta).

Ok, now some REAL talk!!  My philosophy on eating is simple, EAT REAL FOOD.  As a teenager and young adult, I struggled with my weight and my relationship with food was NOT good.  I counted every calorie and had a food journal that I filled out EVERY SINGLE DAY.  Needless to say, it controlled me.  I loved to cook and eat, but I began to realize I wasn’t enjoying it, and even more, I was not feeding my body what it really needed.  It’s not quantity of food it’s QUALITY!  I tried numerous diets, was vegan for a year, was pescatarian for 7 years, was paleo for the past two years and finally today, I have found a good healthy balance.  I’m not one to tell ya’ll what to do, but I’ve found a way to eat that works well for my bod!  No counting calories, no obsessing… just eating healthy foods that are delicious and yummy!

Essentially I eat vegetables, fruits and “clean meats” – i.e. organic chicken/turkey, fish, grass-feed beef.  90% of the time I stay away from sugar, diary and grains.  BUT you know life is all about balance.  If I want a cookie, I’m going to have the damn thing!  I’ve learned that allowing myself sweets and/or bread here and there, helps keep me on-track in the long run.

I have experimented A LOT in the kitchen the past 10 years and have a handful of go-to recipes!  Over the next few months, I will start to share my favorite healthy meals, sides, dressings, tips and tricks.  There’s nothing worse than cooking a healthy meal and it having turn out with ZERO flavor.

Ok, boos… it’s time to make some nom nom Rainbow Wraps!!  See below for ingredients and steps.  Comment below for questions.

Ingredients

(makes 4 wraps)

 4 Rainbow Chard Leafs

1 Cup of Hummus

1 Lb of Chicken – baked or roasted.  I used leftover from

1 Orange Pepper cut into long pieces

1 Avocado sliced

1/2 Cup of Cherry Tomatoes cut in half

Micro Greens

Feta (optional)

1/2 Cup of Cilantro (optional)

Sea Salt

Steps

1. Cut off the stems of the rainbow chard leaves.

2. Spread about 1 Tbsp. of hummus onto chard leaf.

3. Cut or shred chicken into pieces. Place on top of hummus.  Note: I used leftover chicken from the night before from Tasty Yummie’s Tandori Chicken Recipe.

4. Layer on veggies – pepper, avocado, tomatoes, micro greens.

5. Garnish with feta and cilantro (both optional).

6. Top off with sea salt.

7. Start at one side of the leaf and wrap tightly.  Make sure not to overstuff the chard – it will tear.

8. Cut your wrap in half – enjoy!
