Oatmeal Banana Pancakes for the Entire Family

Hey oh, guys! I’m back after a month long break sharing a family favorite breakfast recipe. I’ve been getting requests for MORE healthy recipes, so I will attempt to post a new one a week.

I was initially recipe testing pancakes for Ford and turns out Luke and I love them too! 🙂 They are also great to make ahead of time and heat up for breakfast or a snack throughout the week. I make a few batches and they last us 3ish days. I haven’t tried to freeze them yet, but you could try.

My philosophy when it comes to creating meals is: keep it clean, simple and flavorful. This is what I accomplish with my recipes, putting a healthy twist on meals. Pancakes are a breakfast staple soooooo let’s have them packed full of nutritious ingredients: eggs, oatmeal, flaxseed and bananas!

Theses flapjacks are very easy to make as you literally put everything in a blender and mix! See below for a list of ingredients and steps to make. Enjoy!


Ingredients

2 eggs
2 ripe bananas
2 cups oatmeal (regular or quick)
2/3 cup oat milk (sub preferred milk of choice)
1 tablespoon flaxseed
2 teaspoons baking powder
1 teaspoon cinnamon
1 tablespoon maple syrup
1 teaspoon vanilla
A few pinches of sea salt


Steps

1. Put everything into a blender and mix until smooth (like a batter). Takes about 30 sec on high.

2. Place a pan over medium heat and spray with avocado oil. You could also use butter or coconut oil for more flavor. Let the pan heat up for a minute or two.

3. Scoop 1/4 cup of batter onto pan for each pancake. I can fit 3 on my pan at a time. Wait until you see small bubbles and the batter has firmed up – flip!

4. Once pancakes are cooked all the way through place them on a plate, garnish with your favorite goodies and enjoy! I usually top with more bananas, berries, maybe a little almond butter and drizzle with a small about of maple syrup. YUM!
