Soft Sea Salt Chocolate Chip Cookies \ No Added Sugar

Ok, you guys! I’ve been perfecting my good ole fashioned chocolate chip cookie recipe for the past month, and it’s time to share! Good news, these are on the healthier side per usual with my recipes. Luke and my kiddos have been downing these! So much so, I’ve been making them 1-2 times a week.

I’m all about a SOFT centered cookie, so this was my priority when recipe testing. Make sure you don’t over bake to achieve the perfect texture! I also did not use granulated sugar as it’s SO bad for our bodies. Instead I opted for a delicious, and naturally sweet local raw honey. You could swap for maple syrup however I prefer honey.

I decided to mix my flour as it turned out with the an amazing consistency – half almond and half regular. I use a local organic flour that we also make our sourdough bread with. If you’d like these cookies to be gluten free, simply use only almond flour. But note, the cookies will be more dense. I found mixing the two, was perfection!

Ingredients

1 cup flour

1 cup almond flour

1 teaspoon sea salt

1/3 cup local raw honey

7 tablespoons of melted grass fed butter

1 teaspoon vanilla

1/3 cup dark chocolate chips


Steps

1. Preheat the oven to 350 degrees.

2. In a medium bowl mix together both flours and sea salt.

3. In a separate bowl whisk the raw honey, melted butter and vanilla. Note: I use a mini cast iron to melt the butter on the stove.

4. Mix the dry and wet ingredients with a spatula.

5. Fold in dark chocolate chips.

6. Place the cookie dough in the fridge for 15 minutes to harden. The colder and more solid the fat is, the less the cookies will spread. It also brings out the flavor!

7. Use an ice scream scooper to shape the cookies. Place them on a baking sheet. I use this non-toxic stainless steel option.

8. Take a fork and press down each cookie.

9. Sprinkle with sea salt.

10. Place in the oven to bake for 12 minutes. NO longer. The cookies will be SLIGHTLY browned around the edges.

11. Let the cookies cool and enjoy! Store in an airtight container in your pantry.
