Cashew Butter Protein Bars

Hey y’all! Coming at you with another recipe! Love me a yummy snack I can count on during the week. These cashew butter protein bars are legit! Packed with nutritious ingredients that your entire family will enjoy.

I have been eating more protein and finding ways to incorporate it into my daily intake. In these bars I added grass-fed whey protein and chia to help with this.

See below for a list of ingredients and steps to make. Note: I store these in the fridge and they last for about a week. Trust me, you will go through them fast 😉


Ingredients

2/3 cup cashew butter

1 cup gluten free oatmeal

1/4 cup honey

3 tablespoons protein powder – organic grass-fed whey protein

2 tablespoons flaxseed

2 tablespoons chia seeds

2 tablespoons goji berries

2 tablespoons mini dark chocolate chips.

1 teaspoon vanilla

1/2 teaspoon sea salt


Steps

1. Place all ingredients into blender (exclude chocolate chips) and blend until evenly mixed. I stop and use a spatula to push mixture down as I blend.

2. Put mixture into an 8″x8″ dish and fold in chocolate chips. Once mixed, press into the dish evenly using a spatula.

3. Set in refrigerator for at least 3 hours. I like leaving it overnight.

4. Once it has hardened in the fridge, cut into bars. I typically do 8. Enjoy!

*Store covered in the fridge. These are good for about a week.
