Hiya! Taking it back to when I was a kid in the 90’s and snacking on a Quaker chewy granola bar. Do y’all remember those? I clearly do and loved them, however they are highly processed, and filled with terrible ingredients.
SO… I created a healthy version! YAY! These new and improved chewy granola bars are gluten and diary free, made with nutritious ingredients including: protein powder, gf oatmeal, almond butter, seeds and more.
The bars are super easy to make, mixing all of the ingredients in a bowl, pressing it into a dish and placing them in the fridge to set!
Not only will your kiddos love these, but so will you! I literally just had one as I’m writing this. These make for a great breakfast and/or snack. I pack these bars in the kids lunches all the time.

2 cups gluten free oatmeal
1/4 cup chocolate protein powder – Paleo Valley
2 tablespoons hemp seeds
2 tablespoons chia seeds
1/2 teaspoon sea salt
1 cup almond butter (creamy/oily)
1/3 cup raw honey
1/3 dark chocolate chips
1. Combine all dry ingredients in a large bowl and mix: gf oatmeal, protein powder, hemp seeds, chia seeds, sea salt.
2. In a separate bowl whisk almond butter and honey until combined. *if the honey is hard warm it up first.
3. Pour the almond butter/honey mixture into the dry ingredients. Stir until fully mixed. It should have a cookie dough like consistency.
4. Fold in dark chocolate chips and mix.
5. Place a piece of parchment paper into an 8’x8′ dish.
6. Pour granola mixture into the dish and press down evenly with a spatula and/or hands. See pic.
7. Put into the fridge for 2 hours to set.
8. Pull out of the fridge and cut into bars. Enjoy!
