Creamy Coconut Berry Popsicles

Coming at y’all with a recipe for summer! What’s better than an ice cold popsicle when warm weather hits? These yummy pops are super creamy with a coconut base and low in sugar – only using a little maple syrup to sweeten them up!

Not going to lie, I was attempting to make red, white and blue popsicles for the 4th anddddd the colors didn’t turn out as planned! LOL However these babies are still delish and perf for the entire fam. I used a new mini popsicle mold I found on Amazon – link here.

Note: I made layered popsicles with different flavors, which takes a bit more time, however you can always make one flavor. Pour in the mold and set in the freezer!

Ingredients

1 15oz can of full fat coconut milk

2 tablespoons of maple syrup (I used dark)

1 teaspoon of vanilla

3/4 cup of strawberries (fresh or frozen)

3/4 cup of blueberries (fresh or frozen)


Steps

{makes 8 mini popsicle}

1. Add coconut milk, maple syrup and vanilla to a blender and mix well.

2. Pour mixture evenly into three different glasses

3. Take one glass and pour it back into the blender with the strawberries. Blend until fully mixed. Pour it back into the glass.

4. Take the second glass and pour it back into the blender with the blueberries. Blend until fully mixed. Pour it back into the glass.

5. Now you have three glasses of popsicle mixture: coconut, strawberry and blueberry. Let’s layer the popsicles!

6. Pour the strawberry mixture 1/3 of the way up in each of the popsicle molds. Place in the freezer for 10 minutes so it can set.

7. Pull the mold out of the freezer and repeat the above step with the coconut mixture. Place in freezer for 10 minutes to set.

8. Pull the mold out of the freezer once again and pour the blueberry mixture up to the top. Place popsicle stick in. Put back in the freezer for at least 3-4 hours. Enjoy!
