Howdy! It’s time to make my favorite homemade gluten free granola! I eat this almost everyday on top of yogurt or cottage cheese.
I started to look at the ingredients on store bought granola and realized there is SO much sugar in most. I decided to create my own with all of my favorite goodies: gf oatmeal, coconut, almonds, SO many seeds, cinnamon and a little bit of raw honey to sweeten it up. This recipe is full of healthy fats, fiber and protein!
Since doing my food sensitivity test last month, I found out cashews are inflammatory to my gut, so I decided to make this recipe with almonds. All of that said, you can swap out your favorite nut in this recipe depending on what works for you! I simply took raw almonds and crushed them up.

1 1/2 cup gluten free oatmeal
1/2 cup coconut shreds
1/2 cup crushed raw almonds
1/4 cup pumpkin seeds
2 tablespoons chia seeds
2 tablespoons hemp seeds
2 tablespoons ground flaxseed
1 teaspoon cinnamon
1/2 teaspoon sea salt
3 tablespoons raw honey
2 tablespoons coconut oil (melted)
1 teaspoon vanilla
1. Preheat the oven to 300 degrees.
2. Place all dry ingredients into a large bowl and mix: oatmeal, coconut shreds, crushed almonds, pumpkin seeds, chia, hemp, flaxseed, cinnamon and sea salt.
3. In a small bowl melt raw honey and coconut oil in the microwave for 30 seconds. Add vanilla and whisk until mixed.
4. Pour the wet mixture over the dry ingredients and stir with a spatula until all of the granola looks coated.
5. Place the mixture onto a baking sheet and press flat with a spatula (see picture).
6. Put granola into the oven and bake for 30 minutes or until golden brown.
7. Take the baking sheet out of the oven and let the granola COOL. This is when it will harden. I let it sit for 15 minutes.
8. Once the granola is cooled, take a spatula and scoop it off of the baking sheet. It will naturally start to break a part and fall into pieces. Store in an airtight container.
