Hey there! I’ve been eating more protein lately and I’ve found these egg bites are a great healthy grab and go breakfast or snack. They have 10 grams in each bite! I make them ahead of time when I do my weekly food prep on Sundays.
These protein egg bites are made up of 3 simple ingredients: eggs, grass fed ground beef and spinach. Seasoned with a little salt and pepper, boom, they’re that easy!
I cook them in a high quality non-stick silicon muffin tray: – link here, and keep them in the refrigerator in an airtight container – either glass or a silicone bag.
They last 5-7 days. See below for steps to make.
12 eggs
1/2 pound grass fed ground beef
1 cup spinach
sea salt & pepper
1. Preheat the oven to 350 degrees.
2. In a medium skillet (I use cast iron), cook grass fed ground beef. Season with sea salt and pepper to taste.
3. While the beef is cooking, whisk together 12 eggs in a large bowl.
4. Place 4-5 spinach leaves at the bottom of each muffin cup.
5. Pour eggs on top of the spinach, filling the cup 2/3 of the way up – they will rise.
6. With tongs put a little cooked beef into each muffin cup.
7. Bake in the oven for 25 minutes. Eggs should be fully cooked – they will rise and look slightly golden.
*store in an airtight container in the fridge.

This is really helpful! Thank you. I have had 3 major surgeries over the past 18 mos. and strength training is my favorite thing to do combined with Pilates. However it has been tricky trying to figure out how to eat enough protein in a way I find delicious.
