Nut Butter Energy Balls {GF}

Hi there, guys! It’s been almost a month since I posted because we’ve been down in California helping my mom during her chemo treatments. I’ve discussed it on Insta and a big thank you to y’all for the kind words and support. Much of our focus has been on keeping my Mom’s weight on and making sure she has nutritious foods to eat.

I created these nut butter energy balls with that in mind. They are full of healthy fats, fiber, protein, seeds with very little sugar. Only 1 Tablespoon of honey in the entire recipe. I added goji berries for a hint of chewiness AND they’re loaded with antioxidants. This snack is great if you need to grab something and go, after a workout, for kiddos and breast feeding mamas!

See below for a list of ingredients and steps to make. Note, you can sub any nut butter you prefer. I went with cashew (more creamy) and it was a great balance to the other flavors in the balls. Also this recipe is gluten free just make sure you purchase gf oats.


Ingredients

1 cup gluten free oatmeal

1 cup cashew butter (or any nut butter) *make sure it’s creamy

1/4 cup ground flaxseed

2 tablespoon hemp seeds

2 tablespoon chia seeds

3 tablespoons goji berries

1/4 cup mini dark chocolate chips

1 tablespoon honey (local)

pinch sea salt


Steps

1. Place all ingredients in a bowl and mix with a spatula.

2. Using a spoon scoop out a golf ball size of the mixture and roll. Place on a plate. Repeat. Makes about 12.

3 Cover and put in the fridge to set (harden). They last about a week.

*Note: you can also freeze

  1. Do you have keto friendly recipes? Dr. Just put my husband on that and he loves food! He’s not a happier camper right now!

    • I don’t follow keto/ a specific diet. My recipes are real, whole food focused. I’m sure you could modify some for him!
