Here we go with the first fall recipe of the season! I wanted to take my kiddos favorite almond butter bars and put pumpkin twist on them. They turned out SO good.
These bars are packed with nourishing ingredients: nut butter, oatmeal, seeds, protein powder and more! Combined they make for a great breakfast or snack.

1 cup almond butter
1 1/2 cup oatmeal (gluten free)
1/2 cup pumpkin puree
1/4 cup protein powder – I use this brand
1/4 cup maple syrup
1 teaspoon vanilla
2 tablespoons hemp seeds
2 tablespoons chia seeds
1 1/2 teaspoon pumpkin spice
1/2 teaspoon cinnamon spice
1/4 cup dark chocolate chips
1 teaspoon coconut oil
1. Place the following ingredients into blender: almond butter, oatmeal, pumpkin puree, protein powder, maple syrup, vanilla, hemp seeds, chia seeds, pumpkin spice, cinnamon and mix on high. I stop and use a spatula to push mixture down as I blend.
2. Put mixture into an 8″x8″ dish and press evenly using a spatula.
3. Melt chocolate chips and coconut oil in the microwave – about 60 seconds.
4. Drizzle chocolate mixture on top of the bars.
5. Set in refrigerator for at least 3 hours. I like leaving it overnight.
6. Once it has hardened in the fridge, cut into bars. I typically do 8. Enjoy!
*Store covered in the fridge. These are good for about a week.
