Hi guys! Sharing my simple and easy chia pudding recipe. I make it at least once a week as it’s my 2 year olds favorite breakfast. It’s packed full of protein (chia) and healthy fats (coconut milk). Add your favorite berries and/or granola on top and viola, you have the yummiest meal.
In my opinion, it’s all about the consistency when making chia pudding. The fat in the coconut milk helps to expand the seed, making it pudding-like. I’ve tried this recipe with other milks: almond and oat, but it doesn’t turn out the way I prefer it.

1 can (14oz) full fat coconut milk
6 tablespoons whole chia seeds – I use this brand
2 tablespoons maple syrup
1 teaspoon vanilla extract
1. In a large glass (I use a mason jar), add all four ingredients: coconut milk, chia seeds, maple syrup and vanilla. Whisk until mixed well (picture below).
2. Cover the top of the glass/jar and place it in the fridge overnight.
3. Once the pudding is set, remove it from the fridge and stir using a fork.
4. Serve in individual bowls and add desired toppings. I love berries. Enjoy!
